Nashville - Memphis - New Orleans. What/where else?

The last two and a half weeks of june, me and three buddies in their early 30s will fly into and out of Atlanta for a holiday in the US. We will spend 3 days in Nashville, 2-3 in Memphis and 3 in New Orleans, but the rest of the trip is not set in stone. Although the last weekend will probably be spent in Asheville/Gatlinburg/Chattanooga/Knoxville area as people seem to recommend them as young and urban hot spots.
What are we missing out? We enjoy live music and nightlife, probably not too much into nature, but some civil war
/ history places will be of interest. We can drive 5-6 hours a day if necessary, as we have done and enjoyed some long trips in the past.
From Memphis to New Orleans, Jackson looks like a natural stop, or is there something more interesting along the way (Natches?)? And on the way back up Im considering a detour to Pensacola, as there doesnt seem to be much else of interest till you hit Birmingham. The cities dont have to be big, just have atleast one good bar. Thoughts?
