Advice on which car to take

Background Information:

Alright so a friend (A) and I (B) are going to take a 2 week road trip from the Midwest to the Southwest in December/January. We will be staying with friends where we can, pulling over and sleeping in a teardrop when we have to, and backpacking for a couple nights in the middle.

The Route:

Illinois > Missouri > Arkansas > Texas > New Mexico > Arizona > California > Nevada > Utah > Colorado > Nebraska > Iowa > Illinois. Remember it's also in the winter. Out in Arizona/California/Utah/Colorado we will have to do some light off-roading to get to some trailheads and campsites.

The Options for Cars:

2009 Jeep Wrangler (X) with a manual, 35" off-road tires, something like 12mpg on the highway. The off-road portions would be no issue. Has a tow hitch.

2012 Subaru Impreza (Y) with a manual, something like 30mpg on the highway. The off-road portions might be an issue, but the car already has some cosmetic issues so I wouldn't be afraid to bash it a little. Does not have a tow hitch.

2019 Subaru Crosstrek (Z) with an automatic, something like 30mpg on the highway. Also in perfect condition, so the off-road portions would have to be even more cautious for things like rock chips too. Does not have a tow hitch.

The People:

Person A has limited experience with a manual, but there's time to get them familiar with it before leaving. Owns car Z

Person B is a natural with manual. Owns cars X and Y

So we will be towing a teardrop camper the whole way. Two of the options we would have to install a tow hitch on, one option is ready to go. Two of the options get much better gas mileage and are more comfortable on the highway, one would be much more comfortable with any of the off-highway driving we might do.

Any thoughts would be appreciated.
