(Almost) full Vietnam itinerary - looking for critique and suggestions!

Travelling to Vietnam at the start of April for 3 weeks. I booked it back in June and I'm starting to get SO excited! So far I have the following rough outline for what I'm going to be doing, but I could use some critique of my plans and suggestions for days 17 onwards! In order of things I want to do it probably goes nature > food (very close 2nd) > social stuff/partying etc.

If anyone has any experience with the Phong Nha cave tours that would be great. That and a cooking class somewhere are pretty much the only things I'm 100% set on.

Date/Day Plan
30 March / 1 Go to Heathrow and fly to Hanoi
31 March / 2 Arrive at Hanoi at 09:35, go to first hostel (pre-booked for convenience, hang out for a bit, explore Hanoi in the afternoon/evening)
1 April / 3 More looking around Hanoi. Cooking class at Rose Kitchen
2 April / 4 More Hanoi (?), afternoon bus to Sa Pa. Get to Sa Pa at ~10pm, stay overnight at homestay booked in advance.
3 April / 5 Trekking in Sa Pa - has anyone done any tours here and would think they're worthwhile? Can any parts of Fansipan be done solo?
4 April / 6 More trekking in Sa Pa
5 April / 7 More Sa Pa (?) Night bus to Cat Ba Island
6 April / 8 Arrive in Cat Ba around 8-9am. Spend most of the day relaxing/resting probably.
7 April / 9 Kayaking in Cat Ba (is this possible as a solo traveller or do most places look for small groups?)
8 April / 10 Trekking in Cat Ba
9 April / 11 Travel to Ninh Binh (need to work out details)
10 April / 12 Ninh Binh - cycling, walking, hanging out
11 April / 13 More Ninh Binh, then travel to Phong Nha. Stay overnight at somewhere in Phong Nha
12 April / 14 Phong Nha cave tour day 1
13 April / 15 Cave tour day 2
14 April / 16 Cave tour day 3/back at Phong Nha in the evening. Stay overnight.
15 April / 17 ?
16 April / 18 ?
17 April / 19 ?
18 April / 20 ?
19 April /21 ?
20 April / 22 ?
21 April / 23 Flight from Hanoi to Heathrow at 20:45 :(
