First-time solo traveler/visitor to Paris; review my 2-day itinerary?

Would love your help in reviewing my 2-day itinerary! I'll be visiting Paris for the first time in late September for just 2 days, as an 'appetizer' to a longer trip to Morocco. As I was not originally planning to visit Paris, I'm viewing this stay almost as a bonus side trip, and do not mind missing out on some of the major sights/attractions since I'm sure I'll be returning for a longer stay at some point.
My priorities in planning my trip are having it be enjoyable, relaxing, and flexible (i.e. no tight schedule to adhere to, can deviate from plan if I see an interesting side street or store). I don't want to wear myself out before I get to Morocco, and I don't want to spend huge amounts of money.
For context: I am 23F and will be in Paris solo. I'm well-traveled, know a teeny tiny bit of French, Asian-American, and will be staying at Absolute Hotel in the 11th arr.
My current plan:
- Arrive at CDG 4PM on Tuesday
- Looks like I can get to my hotel in ~1hr by taking the RER train and then a metro for 10 EUR, or in 30 min by Ubering for ~40 EUR. Would you strongly recommend one or the other?
- After checking in at hotel, walk around surrounding neighborhood and find dinner (either a restaurant or from supermarket) depending on how tired I am
- Is there anything low-effort/must-see/must-eat in this immediate neighborhood that I could try to work in on my first night?
- Wednesday:
- Get breakfast at some cafe or the other I pass by
- Take the bus from Jules Ferry to Pont Neuf
- See Sainte Chappelle, Notre Dame, Shakespeare & Company, Pantheon, the Louvre (just outside? may not want to spend time waiting in line to get in. no interest in the mona lisa.)
- Walk along the Seine past the Musee d'Orsay
- Grab lunch somewhere along the way
- end at the Paris Sewer Museum, check it out
- Check out the Eiffel Tower
- Get dinner somewhere - Any recommendations? Mid-range or low budget, authentic, non-touristy would be ideal.
- Travel to Tour Montparnasse (uber? metro?)
- Go to the top, take nightscape photos
- Make my way back to the hotel (metro, walking, Uber)
- Thursday:
- Leisurely morning - head to Montmartre, Sacre-Couer, lunch at Chez Casimir. Mostly just want to soak in the atmosphere of Montmartre - no specific objective.
- Get myself to Porte Maillot sometime around 5PM in order to take the shuttle to Beauvais Airport to make my 9PM flight to Marrakech
Interests:
- Photography (so any great overlooked vantage points would be cool)
- Vintage watches / bargains / small trinkets / used (English) books (not necessary if not easily worked into my schedule)
- Things related to Le Petit Prince
- Anything charming, peaceful, quirky, unconventional
- I've seen "street pianos" (public pianos that are open for anyone to play) and would love to get the chance to play one; are these a thing? The site suggests there's one near Saint-Germain on 16 Quai de Louvre -- has anyone seen it?
- Recommend any tickets/passes/etc. I should buy in advance?
