What do you think about our winter roadtrip itinerary?

Me and 2 friends are planning on doing a road trip through a part of the United States after our exchange semester is done. We are going from December 18th till around January 7th.
Our plan is to book a campervan on Campervanescape, which will cost us around $3500 dollars for three weeks of renting. Does anyone have experience with renting from here, or have a better alternative?
Our current plan is to start in either Salt Lake city or Las Vegas, travel South next to the East coast, then travel to New Orleans for NYE, and end at Orlando to fly back home.
We are however not sure what city to start considering it will be mid December and therefore already colder and snowier further north. We would love to see as many as national parks as we can. What can you recommend us? Since SLC has a lot of national parks surrounding or preference goes there. What is the weather like and are the national parks around SLC doable in the winter?
Furthermore, what do you think about the 3 week itinerary? Will we have enough time to do whatever we want or are we going to be in a rush. Any other recommondations on highlight on our route we must see?
