18M, planning a trip to Hongkong (with some difficulties)

At first, thank you for taking your time reading this article about my current thoughts. Also, I want to mention that my English is not at its best - so sorry for grammatical or spelling mistakes.
As mentioned above, I am 18yo right now and planning a trip to Hongkong in Summer 2019 - so far, so good. But with this idea comes a lot of insecurity. I actually live in Europe and nearly all our earlier travel destinations where located in our home country. I've never traveled alone before, especially not that far and we never used a plane.
To make things clear: finding a hotel, being at an airport or moving around in a city I've never been before is not the major problem. The really challenging part for me is, that I generally have a hard time communicating with other people in general - in some situations, I am so extremely nervous that they can literally hear me stuttering - so they treat me with less respect than usual.
The other problem with the airport is, that I roughly know how to move there. It's just the control in me: thinking about never see my luggage again by placing it somewhere by mistake so that I never see it again - or just don't get my flight because there's SO MUCH going on in general. A simple idea of getting things done there should be the answer, but I just simply don't know.
Theoretically, this should be possible - but as I mentioned above, some points seem like a giant wall blocking me off.
It would be very helpful to get a simpler view of the whole situation, some clearness in similar situations because I obv. never done something huge like this before and it would be pleasant to hear some opinions about the idea itself and how I should set my mind.
