I have some questions/reluctances... Pls help!

I have been bitten by the travel bug after journeying West Europe last year through study abroad as well as Israel for my birthright trip this spring. I am halfway through with college, but withdrew for personal reasons and am spending some time off before finishing undergrad.
The way that I see it, this is the perfect time to do an 'out of your comfort zone' excursion to 'find myself' (cheesy, maybe...). Although it gives me anxiety knowing what this would entail, I have a deep yearning to travel and experience the world and am willing to challenge myself.
Ive been pondering using Wwoof, workaway, couchsurf, 'peace corps' type volunteer things, etc.
The problem is two-fold: 1) I am having trouble narrowing down my options. I have been thinking South America (Colombia, Bolivia, Ecuador, Peru), but I am not sure which to decide. Eventually I do want to get to Thailand and India, but that seems a bit too challenging- at least in South America I can speak moderate spanish. Also, I have been flirting with learning about Shamanism, (possibly a ceremony or two if I find it). I want to be studious about my destinations to prepare for the custom/culture, but I just cannot choose where to start and spend my time. 2) Planning. I am very bad at it and bad at decision making. How long can I stay? Can I travel around to different countries and if so how far in advance should I be buying plane tickets and reserving sojourns? Would I have to plan ahead of time if I wanted to get a job in the country or could I just play it by ear? How much money should I bring? Is bringing the bare essentials (i.e. everything in an Osprey hiking backpack)dumb for this occasion.
Overall, I just want to experience the world and feel the freedom of not being on a strict schedule. I would like the possibility that if I wanted to change plans, it would not involve arduous rescheduling and worry over logistics.
Please any advice or criticism of my thoughts would be greatly appreciated!
