Driving from CA Bay Area to Arizona at some point, nice places to spend a night on the way?

At some point in the next six months, I plan to drive from the Bay Area down to Arizona (around Flagstaff) and back, doing both the departing and returning drives in two days each. I'd like to stay somewhere interesting for each night I'll be on the road, loosely along the lines of an Airbnb somewhere I can see the Milky Way.

Any recommendations? I'd really like to avoid close contact with other people, even if the vaccine hopefully starts to curb the spread of covid in the next few months.
