Roadtrip Feasible (Idaho, Wyoming, Montana)?

Hope y'all are doing well.
My sister and I are planning a roadtrip and would love some feedback on the rough itinerary below:
Day 1 (oct 6) - Fly into Boise Idaho. Pick up rental car and drive to Boise County for dark sky gazing (3hr drive)
Day 2 (oct 7) - Wake up early. Drive to Yellowstone National Park (4hr drive) - spend the day there
Day 3 (oct 8) - Another day Yellowstone National Park
Day 4 (oct 9) - Drive to Grand Teton National Park (40 min drive) - spend day Grand Teton National Park
Day 5 (oct 10) - Day 2 Grand Teton National Park
Day 6 (oct 11) - Grand Teton National Park To SLC (5hr drive) - spend day SLC
Day 7 (oct 12) - SLC to Arches National Park (4hr drive) - spend day at Arches National Park
Day 8 (oct 13) - Arches National Park to Zion National Park (5hr drive) - spend day at Zion National Park
Day 9 (oct 14) - Another day Zion National Park (potentially Bryce if there's time)
Day 10 (oct 15) - Zion National Park to Las Vegas (3hrs)
Day 11 (oct 16) - Fly out of Las Vegas
We would love advice / feedback on if this is a good plan / feasible weather wise in the month of October and within the time frame listed. We're honestly not really super into hiking / national parks. We don't mind just spending time to enjoy the sights.
Also, would love advice / feedback on the drive (i.e. if it's an easy drive, strain, etc.), since only one of us will be driving (want to make sure this is more leisurely versus stressful).
Alternatively, we can just do most of Utah if the above isn't feasible (mostly Utah and a bit of Vegas where we would fly into and fly out of - since we're coming from NYC).
Curious on if you guys have any preferences on any of the parks listed above or sights we may have missed that are a must see while we're there.
In terms of food, since we're not near any major cities, does anyone have any recommendation on places along the way / pit stops. We're thinking of getting a cooler, buying some food at a grocery store, and doing picnics at the parks, but interested to see what y'all would recommend.
