Planning a trip from San Antonio, Texas to Santa Monica, CA sometime in the future. Any advice for the trip?

I'm hoping I can do this trip around August, but thanks to our friend COVID-19 that might not happen until later, or perhaps not at all. Who knows? Still, it's never too soon to start making plans.

Per Google Maps it's about a 20 hour drive if you go non-stop. I know some people have done it with minimal stops and without getting a hotel in NM or AZ, but I don't think that would be feasible for me. Still, I'd like to do it over two days maximum, leaving early on day one and getting in late on day two. Sightseeing isn't a priority, but if there is anything interesting to see along the way I don't mind stopping for an hour or two to see it.

I'm on the fence as to where I should stop and get a hotel. Should I stop at the halfway point in Deming, NM, or should I push through and stop somewhere in AZ (Tucson or Phoenix)? Any suggestions?

Also, is there anything I should know about the drive itself? I'm most concerned about the fuel situation. My car gets about 23 MPG so not terrible, but not great. I know there are a few places here in Texas where fuel stations along I-10 are sparse, but I'm not sure about the rest of the way. How much of a concern would that be for those of you who've made this (or a similar) trip?

I've never roadtripped outside of Texas before, so I'm a little new to this. Any help or advice would be appreciated.
