Two weeks in South America; 2019 country suggestions?
Hello,
Looking to experience a location or two in South America during a two week vacation. I'm fairly open to dates, but October is historically when I've gone on my vacations (Australia/All over Europe/Japan). With all the political changes I thought I'd ask for some up-to-date suggestions. Anything and everything for the continent I'd greatly appreciate! If it helps any, I'm a guy around the old age of 30 from the USA.
Location: I'm not opposed to hopping from one location (or country) to another with public transit or flights once I'm in an area. I'm seeing some really good flight deals that would get me cheaply to Ecuador or Colombia. Are either of those reliably safe and a great candidate for a two week vacation?

Ecuador seems like good country to get a good feel for with two weeks. Quito seems like a good staging city with a deep food culture with great history to dig into. I've never really done a beach vacation, so would be interesting to also spend a little time on the coast in that country too.

Peru seems like the choice everyone goes for, with the ruines and Machu Picchu. Though it's massive, would definitely probably split my time between a large city or two and then small detours from the city bases.

Chili would also be attractive. The idea of traveling the Pan American Highway sounds fun as hell as well.
Interests: Photography, hiking, culture, foodie, motorcyclist (rent where I can when traveling).
Travel Style: Budget. Not afraid of vetted hostels, public transit, eating at the local market/small family restaurant.
