Ideas for spontaneous trip with little planning involved? (2-3 weeks, maybe somewhere in Europe)

I have a strange opportunity where I can travel pretty much wherever in the world for 2-3 weeks late May/ early June and was wondering if anyone has any ideas or similar experiences?

I am usually the type to plan everything to the last detail when it comes to traveling, but with the strange circumstances of this, I essentially have (in my mind) no time to plan much of anything. I spent 3 weeks in Japan a few years back and considered just doing that again considering my familiarity, but booking places to stay with such short notice doesn't seem to be an easy thing to do. I additionally have ADHD medication which isnt allowed in Japan and am hesitant to try and ween myself off of it in such a short time.

So with all that said, I was thinking maybe somewhere in europe would work? My only stipulations in regards to price is that I could get by finding places to sleep for <$100 USD.

As for information about myself, I am 25, male, and have little interest in "nightlife" (the social aspect of it). I am mostly feeling stressed because the opportunity was sort of sprung on me, but I want to take advantage of it. I enjoy places where I can simply walk around and look at cool things, and figure out what museums/etc to go to on the fly.

A big "concern" for me is that I probably wouldn't want to stay in one place the entire 2-3 weeks, I'd like to be able to jump on a train or whatever and go somewhere else. I would however like to have a bare-bones itenerary that atleast places me in a certain city on a certain day (ie land in City A for 3 days, go to City B for 5 days ... Fly home from City X).

And again, I'd like to be able to find places to sleep on a day-to-day basis for less than 100 USD. Budget is not really of enormous concern, so I would be flexible in any worst case scenarios. But if I had to provide a number I'll just say i'd like the whole trip to be less than $4000 (not including the airfare for cross-continental flights).

As for where my head is currently, I am leaning towards somewhere that is not South America as it doesn't particularly interest me. I've already been to UK, Italy, Greece, Japan, so would like to find someplace I haven't been before. If anyone managed to read my whole post I sincerely thank you for even considering offering advice.
