Drowning in Options for Short October Portugal/Spain Trip
Hello! I found a cheap flight on TAP to fly NYC->MAD, with an 8 hour Lisbon layover. I work in the wine biz, so my first thought (having been to Madrid and Barcelona before) was to spend most of my time in Rioja. But as I researched, more and more people said San Sebastian was the place, and to spend as much time as possible there. So then I thought to skip Logrono and go direct to SS and take a Rioja daytrip if I wanted.
And THEN I realized my departing flight is on Norwegian so I could just stay in Lisbon and take a night train to SS, or maybe stop in Porto along the way... I usually am very chill with planning, but the more I research the more complicated this gets.
So I'm asking for your help on two major questions:

Should I skip Rioja entirely (feels tough to do because that was my initial plan) and focus on San Sebastian and daytrips (I'd like to step foot in France.. hmm maybe Bordeaux? Here we go..)?

If I ditch Rioja, should I ditch LIS->MAD and take the night train to SS directly? Otherwise it'll be the usual mix of bus/rail that seems will take me close to Rioja anyway.
I'm primarily interested in wine and food. I land in Lisbon the morning of Oct 9th, fly out of Madrid on a different airline Oct 14th. The rest is yet unplanned. So please tell me I am doing too much :)
