Amsterdam/Belgium/Paris 10 days - Advice
Hi, 26/M here from NY, beginner solo traveler (2nd time) planning 10 day trip in May 2019. No particular reason for this trip other than to enjoy myself by seeing/tasting what other countries have to offer, so I'm mainly interested in the typical must-dos and trys as well as any hidden gems you guys can recommend in terms of food, drinks, sights, activities. Particularly need advice on Paris.
Day 1-3: Arrive in Amsterdam. Museums (Reykjavik, Van Gogh, Anne Frank House). Canal tour w/ dam boat guys. Stroll through Red light district. Dabble in some toking at a coffee shop (someone suggested toking and hitting the microbe museum - this sounds really cool, thoughts?), Chill at Vondelpark if weathers nice. Renting bike if it looks practical - worried about failing at the road rules and etiquette.
I've never stayed at a hostel but considering it for the price and social aspect. Like many others, I hate the idea of sleeping with strangers in the same room due to safety/privacy reasons, but willing to give it a shot - I just need some more perspective. I am eyeing the ClinkNOORD and Flying Pig Downtown for Amsterdam, not sure what I would be getting into. Don't want an overly party hostel since I value my sleep. Also, I am a snorer and worried that I will disturb others sleep.
Day 4-6: Afternoon train from Amsterdam to Brussels. My research on Brussels convinced me that this place is not worth staying in, so my current plan is to walk to Grand Place from the train station, check out Delirium Cafe, eat some goodies, and then return to train station to go to Ghent where I will be making base. Again, I am considering hostels, and it would be Hostel Uppelink. Day 5 would be exploring Ghent. Day 6 would be a day trip to Bruges. No specific plans for either place yet, as they seem like places to just wing it and explore/chill.
Side thought on Brussels-Midi train station: I prioritize safety, and I am reading that this place is notoriously sketchy. Should I be worried about my night train to Ghent (8-9pm) or walking in/out of the station?
Day 7: Morning train from Ghent back to Brussels to catch afternoon train from Brussels to Paris. During my layover in Brussels (3-5 hours), I want to check out Catillon Brewery, and hit up anything I might've missed the first night I arrived, but keeping expectations low. Arriving in Paris at like 4:30PM, no idea what to do for the night or where to stay.
Day 8-10: Paris. I've been here before for a couple layovers, and visited Notre Dame Cathedral and been outside of Louvre. Got macaroons from Laduree. Wanted to visit Museum Orsee but it was closed, so definitely going back. I also want to go inside Louvre this time. Catacombs, maybe? Don't know too much about it, but looks interesting. I'm good to skip Eiffel. I know it's hard to suggest what to do for me since Paris has a lot to offer, so I guess mainly your top food suggestions.
Leaving day 10 to NY at 7PM.
Miscellaneous info: Trying to one-bag it, have been checking out r/onebag. No budget problems except for where to stay, I aim to stay under $100USD a night. No flexibility on the Amsterdam-Brussels and Brussels-Paris trains since already booked (unless good reason to cancel).
