Travel itinerary - 1 week Flying In/Out of Madrid

I am flying in and out of Madrid 5/25 to 6/1, but from what I've heard I don't need more than 2/3 days in the city so I want to visit somewhere else. The flight there was hundreds dollars cheaper than any surrounding cities so I'm thinking of spending a day or two at the beginning and end of the week but visit another city in the middle. I was thinking of 3 possible options: 1.) Train to Seville, 2.) Train to Barcelona, or 3.) Flight to Lisbon (actually the cheapest option). Any thoughts or other ideas?

I'm not much of a beach person and all I'm really looking for is somewhere that's great to explore and aimlessly walk around. Also good food and nightlife would be a plus. Thanks!
