Been planning a 2 week trip to Japan in May for almost a year now. Found out it's more affordable to stop in South Korea first, then Japan. What is there to do in South Korea?

I've been planning for a while now to solo trip to Japan. There was one major sale on ticket prices half off around 7 months prior to the time I want to visit, but I didn't even know what my plans let alone my semester layout was going to be like. Still no sale (max 1 layover preferred) since.
I've always wanted to revisit South Korea (went as a minor over a decade ago) but assumed it'd be just as expensive if not more due to the longer distance. To my surprise, it's about $500 cheaper than just going straight to Japan. A RT ticket from Seoul to Tokyo is a little under $200 so still $300 cheaper than just outright going to Japan! I plan to buy tickets within the week.
With that in mind, I really can't see why I wouldn't save $300 and also get to visit both Japan and South Korea! I'm not too sure how long I'd stay in South Korea for (I wanted to explore quite a bit of Japan already), but I figured maybe stay 1-2 days in Korea before heading to Japan, and stay 1-2 in Korea before heading back to the States. That way, I can both spend some time in Korea and not risk missing my flights due to possible layovers.
That said, I have no idea what to do there, where to stay, what to try, or even where/what to eat besides Korean BBQ and spicy food (which I love). So any help would be greatly appreciated! Thank you in advance!
tl;dr Visiting Japan for 2 weeks. Always wanted to revisit SK one day, and it turns out it's cheaper to visit SK then Japan (and back). However, I have no idea what to do there.
