Tips for two weeks in Vietnam?

Hey guys, so I'm going to be in Vietnam for two weeks solo, and I was looking for tips and advice on where to go during this time period, as I'm starting in the middle of January, and ending beginning of February. My itinerary is mainly non-existent outside of my first few days in a hostel in HCMC booked and knowing I want to fly up to Hanoi after Dalat, but otherwise, I could use some advice.

At the moment, my four main city ideas are HCMC, Hanoi, Dalat, and Hue. I've been recommended Mui Ne and Hoi An, but I've heard mixed things about Hoi An, and Mui Ne, while looks like a great city for relaxation and shopping, doesn't seem to carry as much cultural or food-related context that I'd like to center my trip around. I'm also a fan of Museums, but not so overly fond of them that I'd like to do more than a few during this trip, I've burned out on them after Greece and Spain, so I could definitely do with any cool activity recommendations that I won't normally find on trip advisor/google.

I've taken a look at tour groups, the main one being OneTrip who seem to provide at least moderately interesting food tours and other such things. My question for these are if the other tours towards more touristy activities (Stuff like Cu Chi tunnels or the 2 day tour to Mekong Delta) are worth it, especially since a lot of these tours cost upwards of $300. Also wondering if I should skip any locations due to the fact that it seems like I'm catching the tail end of the monsoon season.

Also, most importantly, if you have any specific dishes for these regions (I'm clearing through the search results but when you get too many you can never really tell which dishes are actually worth it) I should absolutely try, since while I will be picking up pretty much every street food I see when I'm walking around, there are only so many meals I can fit in my stomach before I pop.
