Plans to live in Spain for a month. No travel experience or idea where to start. Need advice.

I plan on traveling to Spain sometime in the Spring of next year (I am not committed to a specific month, I just have to let my job know in advance). I want to stay for a month, but I don't know where to start with regards to making plans.

Do I speak to a travel agent (and how do I find a good one)? I don't want to stay in a hotel, so I don't even know if they'd help since I read they make commission based off deals they have with the hotels and destinations they sell in their packages.

Here is what I am looking to do and what I want:

I want to rent a place on the cheap. I don't care if I live with others or if it's a cheap house or whatever. I don't want to pay for a hotel though. It has to have a kitchen so that I can cook most of my meals. I plan on experiencing the cuisine, but most of the time I will be eating in so that I am not spending too much money on food.

I want to live in a more historic city, something old and less touristy where I'll be forced to use my Spanish. A big part of this trip for me is learning to speak Spanish fluently since I understand it completely but speak a broken version of the language (I am one of the many hispanic kids in the US whose parents were told in the mid 80s to early 90s that teaching your kids Spanish would confuse them when, in fact, early childhood is the best time to learn a language). So less access to others who speak English is ideal.

I’d like a city that has access to cheap and reliable transportation to other cities (in Spain, possibly even Europe if that exists). I’d like to make weekend trips to other major cities.

I’d like something warm. Probably something closer to the south. Are the cities closer to the Mediterranean warm in the Spring? Is Barcelona to far north in the Spring to make trips to the beach?

My budget would be around 3 grand which I’ve read is doable. I already have more but I rather not spend it if I don’t have to. If there’s work that can be done part time, that’d be great, but I am saving Paid Time Off, so working wouldn’t be required. If anything, a part time job like bussing tables would be nice to force myself to interact with people and speak Spanish, but if that’s a tall order, I don’t really need to plan for it, because I don’t need the money.
