Travel itinerary for 1 month in Italy. Advice needed on what to do and how to spend my 2500 euros
First post here, long time lurker!
I'm going to Italy in a couple days, I've already got flights and accommodation booked (AirBnB). I've got 2500 Euros of spending money while I'm there, I haven't paid for any bus or train fares yet so there's that too.

Palermo 2 nights

Milan 4 nights (plane)

Venice 4 nights (plane)

Florence 4 nights (plane)

Rome 4 nights (plane)

Catania 3 nights (plane)

Siracusa 2 nights (bus, haven't organised yet)

Agrigento 1 night (bus, haven't organised yet)

Palermo 3 nights (bus, haven't organised yet)
Then the plane back home to Australia :). If you're wondering why I'm starting in Palermo then circling back there it's because I made an arguably stupid decision to only stay in Palermo for the whole month but later changed my mind and decided to make the most of the trip and see as much of Italy as possible. It was cheaper to circle back then to change the flight but hey you live and you learn not the other way around!
Would love some advice on places I must see and places I must eat (heads up, I'm vegan). I really have nothing planned out. Also would appreciate advice on how to meet people, since I'm not staying in hostels, I don't really have a game plan. I'm bringing a tablet with Kindle to keep me company but I'd like to create some memories of my own with real people. This will be my first time traveling overseas so I don't really know what I'm doing. Any help at all would be appreciated :)
EDIT: so I've realised that my post is a little sparse on the specifics of what I actually want to do. I want to see museums, I want to see awesome architecture and cathedrals, snap a few photos for IG, have some good food and meet some good people.
