I feel like I always see people on here mention that they will book a few nights at a hostel, then stay another few if they enjoy it (or move if not).

It always struck me as surprising - aren't hostels often sold out? Is it really possible to easily do this?

For context, I'm planning a 4 week trip in Europe this winter. Since it's off-season, I guess hostels likely won't fill up, but I'm curious if other people have experiences with this.
