8 full days in Vietnam - What should I do?

So far the only travel plans I have are that I'm going to be in Vietnam for 8 full days. I plan on spending 4 full days in Ho Chi Minh and then catching a flight in the early morning to Hanoi for another 4 full days. I have a friend in Ho Chi Minh to show me around, and the only plans I have in Hanoi is a day trip to Halong Bay.

Here are a few details: I'll be traveling in mid-January with no strict budget. I'm looking for anything involving history, food, or experiences that will make me fell like a local, etc. Not particularly interested in just partying there, but I would still be down to go out and meet locals/expacts for a drink.

Do you have any recommendations for things to do/places to eat? I literally have no plans and am pretty excited about it. If you could provide me with any tips, I would really appreciate it.
