Worth buying two separate ticket round trip tickets? Heading to the Balkans

My wife and I are seriously considering going to Montenegro and Albania next summer. To make a long story short, it appears that it's cheaper to fly from NYC into London or Paris, and then buy another ticket from there to Dubrovnik. Of course, if we go this route, we'd need to overnight a day or two in either city so as to avoid potential schedule conflicts, which is not a bad gig, but also not the focus of the trip.

Has anyone out here done this before? Is it worth taking the extra day or two to see the sights briefly, or are there pitfalls that I'm not seeing?
