Must spend $1000 on one hotel stay for family vacation. Where to go?

So I managed to snag a $1000 Orbitz credit for a single hotel stay. I only paid $650 for it so it was a pretty good deal. I thought "$1000 on hotels? No problem." Well dumb me didn't read the T&C closely and didn't realize I couldn't split it up. It all has to be spent on a single hotel stay of at least $1000 before taxes, fees, etc. Not ideal but I'll work with what I've got. I'd like some ideas on how to use it.

Here's what we've done in the past to give you an idea of what vacations are like for me and my family. Two primary exmples. First was a road tour of 3 days in Teton/Yellowstone National Park, 4 days in North Dakota (TR National Park, Medora, visit parents), and 1 day South Dakota (Rushmore, Wind Caves National Park). Our oldest at the time (and only at the time) was 2. Longest day of driving was about 10 hrs. Personally this was my favorite vacation. Lots of cool things to see. The second was the one we did just a month ago. The typical SoCal tour of SeaWorld, San Diego Zoo, and Disneyland (one day each). Kids are now 4 and 18 months. Took two days to drive there and two days back though we could have done it in one very long day (12+ hrs). Longest day of driving was about 7 hours. Both of those were starting from the Salt Lake City, Utah area but that won't be the case for our next vacation because we're moving to the San Jose, CA area by the end of the year.

So the credit is good through 2018. Oldest starts kindergarten next year. We'd like another kid (yeah, we're Mormon) and so pregnancy/small baby may be a factor. Plus with the move/new job, vacation time will be depleted for a while. So the vacation will most likely be sometime in August, the week of Thanksgiving, or the week of Christmas (all 2018). (Yes, I know those are when everyone else vacations and I can expect crowds.)

Right now our best idea is the Monterey, CA area (not too much driving) or do Disneyland for 3 or 4 days. Northerly ideas would be welcome but I would imagine those would only work if we end up doing August. The biggest contraint by far is spending $1000 on one, single hotel stay, which is where we would focus our vacation on. It also eliminates road trip vacations, like our Yellowstone trip. Given the minimum price, it would be 4-6 nights stay, probably. 3 nights just seems expensive (though if it were the right place it's not totally out of the question) and 7 nights is just too long. Flying isn't out of the question but it would mean 4 tickets ($$) and the whole pregnancy/baby thing complicates it. Driving is preferred.
