Help me choose a European country to travel to

Hi guys! I'll be traveling to London in early July 2018 to visit some family, and thought I'd take a week off to travel somewhere in Europe. I currently have a few options in mind, and thought I'd consult r/travel to see if any of these options are feasible and/or optimal. A few things to know beforehand:

  • It'll be a 7 day 6 night solo trip, and I try to time my flights so that I arrive in the morning and depart in the evening

  • Budget will be tight (like approx. £500 excluding flights) so will rely on hostels (I know about couchsurfing, but never really had any luck with it) and public transportation instead of car rentals

  • I'm a very experiential person, and love trying new food (but I don't really take alcohol) and checking out picturesque sights. Scenes like the Neuschwanstein castle or the Matterhorn really do it for me, as do interesting architecture like the Amsterdam waterfront or the Trevi Fountain. However, I'm not really an art person

With that out of the way, here are the options I'm considering:

1) Netherlands. Will probably spend most of my time in Amsterdam, visiting places like the Anne Frank Museum and Brouwerij 't IJ (more for the windmill than the beer), and just strolling around the city. Possibly detour to Rotterdam for a day or two?

2) Italy. Plan to touch down in Rome and spend about 3 days days here before moving onto either Florence or Venice (understand that it's impossible to squeeze all 3 places into such a short duration). Few places I plan to visit are the Colosseum, Trevi Fountain, the Grand Canal (if Venice). Also interested in visiting Eataly World from Florence as well if possible.

3) Portugal. Will likely split my time between Lisbon and Porto, visiting places like the Duoro Valley, Águas Livres Aqueduct, and Sintra.

Would love to hear any feedback or suggestions on the current options or any other countries you think I should consider, and feel free to shoot any questions you might have as well. Thanks so much!

EDIT: Forgot to mention, here are a list of countries I've been to in Europe, so no need to recommend these:

Scotland, Germany, France, Bulgaria, Switzerland
