Northern California Road Trip tips, must include Mt Shasta

My boyfriend and I are planning a small road trip (10 days max) in the Northern California area. The only place he really wants to go is Mt Shasta, but he's leaving the rest up to me.

I've been trying to plan out multiple route options, but I'm having trouble figuring out what I want to see most (any tips of fav places would be great!) And also what route to take.

I was thinking about flying into San Fran, spend some time there and in Napa Valley, and driving north through the Avenue of Giants before heading to Shasta. But I was ALSO considering driving up at least some of the pacific coast highway and skipping Avenue of Giants. Taking PCH would add a couple of extra hours, and I'm more of a mountain person than a beach person so PCH isn't like super high on my bucket list, but I just want to get as much out of this trip as possible. I keep seeing Avenue of Giants is one of the most beautiful drives, but I also know there's plenty of spots closer to the coast that I can see them. Thoughts??

Then here is the main decision I'm struggling with. I would LOVE to hit up a few places in Oregon - Crater Lake and/or Umpqua Nat. Forest after Shasta. If I did that, I'd fly into San Francisco and then fly out of Medford, Oregon to go back home... but is that too much in a 10 day trip? Should I just circle back down to San Francisco after Shasta? If so, are there any other stops along the way besides Redding that are worth checking out? I feel like if I just make a loop, we don't really get to see much. But I'm not sure if going up into Oregon is TOO much. Now I know this will depend more on us and how much we want to drive and how much time we want to spend in each place, but any advice, tips, or stories of your own on similar trips would be great.
