Chicago to LA - any must-see short stops / scenic points along the 80?

We've decided to drive our 9 month old from Chicago to LA in about 1.5 months (hopefully the weather will be good - will appreciate comments on this if anyone knows).

We'll be taking the 80-76-70 (previously took the northern scenic route up along CA coast and hit Yellowstone, Grand Teton, Badlands, etc) so this time we're mostly just trying to take the shortest route possible. That being said, with a 9 month old, we recognize we probably need to take short stops every 1-3 hours to get some fresh air, chang diapers, and let baby stretch his legs a bit. We're planning 4-5 days total for the trip.

Anyone have suggestions of places that aren't far off the path that would be nice for short stops so we can more than just rest stops on the way? Any hidden gems?
