Help: 1st Solo Trip, Sydney -> South Pacific

I live in the UK but will be studying in Sydney for 6 weeks in June/July. I'd really love to spend a couple of weeks at the end travelling round to a couple of islands but am slightly nervous (20, female) and confused (so many places to choose from!).
I was strongly considering Fiji - in particular Barefoot Manta and Oarsman's Bay - because they have lots of provisions for backpackers around the Yasawas, and it's the perfect time to see manta rays.
However, I don't really want to go somewhere just because it's popular (I'm not a mad fan of crowds, and often there are far more beautiful places that are largely unknown), so I've also been looking around at Palau, New Caledonia and Samoa, or doing a joint New Zealand/French Polynesia trip.
I guess the main criteria are safety, not too expensive, some gorgeous beaches and good swimming and/or hiking capabilities. I don't need 101 things to do, I'm quite happy to sit myself down with a book or wander round with a camera - though friendly locals would be much appreciated.
Do you have any opinions/suggestions about where might be best?
