Taking ferry from Aqaba (Jordan) to Nuweiba (Egypt) + Mt. Sinai Hike Questions

I am planning to take the ferry from Aqaba in Jordan over to Nueweiba in Egypt and then taking a taxi to a hostel in Dahab and then going on a sunrise hike at Mt. Sinai before flying to Cairo from Sharm el-Sheikh. I am wondering how feasible this is (and also if the taxi will accept USD or only Egyptian pounds). I wasn't sure if that would be my best option or if I should just fly into Cairo and from there fly to Sharm el-Sheikh and do my hike from there? I will be traveling by myself (24M/USA) and do not speak Arabic. Thanks!
