Solo travel for 2-3 months with one goal: an adventure. What direction should I take this?

So I'll be taking next semester off from school to figure out exactly what I want to study in the future and for financial reasons. I'll be transferring to a university which is significantly cheaper next spring and will save lots of money. So basically I'm free all of first semester and want to travel.

The one thing I want out of this is an adventure. Right now I don't exactly know how I want to go about my trip. Should I make it structured, and plan to work/volunteer? Should I make it as unstructured as possible and just see where my travels take me?

The later sounds so appealing because anything would be on the table. If I enjoyed one area I could stay for as long as I wanted, if I was bored of a place I could leave, if I met somebody at a hostile who was also traveling and wanted to travel with them somewhere I could do so.

Is this a terrible idea? Would I get bored without working and volunteering during a travel experience this long?

I'm 20 years old and very sociable. I have always been incredibly independent and am the type to bet on myself. Would it be a mistake thinking I could go this long through Europe without any large plan? I fear I'm overconfident because of my perspective of things in the US, and don't want to jump into traveling and feel lost.

I'll have a budget of about 6-8k as well. I don't have a finalized list but countries on my radar right now are Hungary, Romania, Poland, Greece, Portugal, Estonia, Italy, Ireland, and the UK.
