Long weekend road trip into the midwest, any destination suggestions?

Hi everyone, looking for input on things to do or see on a weekend road trip my girlfriend and I are taking. We currently live in Asheville, NC, and I've always wanted to check out a little of the midwest. My girlfriend has Monday, Tuesday, and Wednesday off, and I work remotely, so we decided to take a bit of a drive out west. Initially, I suggested Omaha NE, since that seemed to be a common reply in other midwest destination threads, but I'm not sure what exactly there is to do there. We are tentatively planning on heading to Omaha, and from there going south and taking Route 66 through Oklahoma and back to Asheville. She has a large car that we can lay the seats down and sleep in.

Does anyone have any suggestions of things to do or see in any of the surrounding states in the midwest/southeast? We're pretty much just winging it with no real plan.
