Backpacking France / Suggestions for the south of France

Hi, so I'm in the beginning phases of planning for this trip. It's centered around a Workaway I will be doing in a village near Orange, France (about 2 hours south of Lyon) for about 3 weeks in September.

Some background: I was in Paris for 3 weeks in 2015, did a couple day trips to parts of Normandie, and also went to Cannes for 5 days last year. I studied French through highschool and college so I can get by but I'm nowhere near fluent. For this trip I want to see nature, countryside, smaller cities - parts of France I haven't seen.

I'll be flying in from NYC. My total budget is about $4,000 for everything - flights, trains, hostels, food, etc. However, food and accommodation is provided during the 3 weeks I will be volunteering and it's a small village so I'll spend almost no money. I don't have a set dates/ an amount of time to fit this trip into - really just depends on how long my money can go.

Two options for beginning the trip):

  1. Fly into Paris (flights are a bit cheaper by about $70 as of now), stay for a 2 nights, take the train to Lyon.
  2. Just fly into Lyon and begin my trip there.

Leaning towards just flying into Lyon because I think I will still end up spending less than in Paris and there's nothing I'm really dying to do there - would just be nice to go back. After that:

4-5 nights in Lyon (What would be enough?) 2 nights in Lake Annecy Then off to volunteer for 3 weeks

Now here's where I'm not sure. I want to head in the direction towards Barcelona to see family but want to make some stops in the South of France or in Spain along the way. By this time it will be the end of sept / beginning of oct so starting to cool down elsewhere.

Would Montpellier be a good option on the way for a solo travel? Any other smaller cities I'm overlooking, or cities with a decent hostel scene? Would be nice to stop by somewhere with a beach. I have never been to Spain and know nothing about it so suggestions around Barcelona would be helpful.

Open to any suggestions for Lyon, any places to see between Lyon and Barcelona, or just anything I might be overlooking. Would even be willing to go some places out of the way if it's really worth it. Thanks!
