Solo road trip from BC to CA in December?

Hello, I live in Vancouver, BC and starting next week I'll have 18 days of vacation and I'm thinking about doing a road trip to somewhere south until it gets relatively warm.

I've done several road trips in the past so I'm quite organized and prepared. I've visited most of the major cities on the West Coast: Seattle, Portland, San Francisco, Los Angeles, Las Vegas, Phoenix. Although it's interesting to stop and check out big cities I would prefer to see more nature this time. I have AWD vehicle with winter tires, will take my snowshoes, mountain bike, hiking and camping gear. I'm planning to sleep in my tent, hammock or in the car. So far the coldest I've slept in my hammock was -15 C (5 F). However, it was a challenge and I would prefer to spend the majority of my time in relatively warm weather, let's say +10 C (50 F) or more.

Could you please recommend some good places to visit where I could stop to camp for a day or two, take a hike/snowshoe and/or ride my mountain bike? E.g. I would like to visit Crater Lake or Yosemite National Park but in December most of the roads out there are closed due to snow. I would love to hear some suggestions from locals or someone who did a similar trip at this time of the year. I'm pretty open to any suggestions as long as I could make the round trip in 18 days.

Also, I would like to buy a prepaid sim card with a data plan so I could google stuff along the way. So far the best I've found is AT&T prepaid plan which offers 8gb of data for $50. Will I have data in all states? Are there any other good data plans that I'm not aware? I don't really need 8gb of data, 4gb would be more than enough.

And the last question about the atlas. In Canada, I use Backroad Mapbooks which have decent maps with all the backroads, hikes, campgrounds, fishing spots, etc. Is there a good alternative for West Coast USA? I've googled a bit and found California Road and Recreation Atlas. Is it a good atlas? And where could I buy one while travelling?
