SoCal to Northern Illinois in November with a quick stop in Denver

I’ve been lurking through this page as I plan my first ever road trip with my husband to go visit his family for thanksgiving. Unfortunately, I think we scared ourselves reading about driving in the snow on the I-70. Id love any tips from you all.
Start: San Diego in the evening—Stop in Las Vegas for the night—Vegas to Denver all day drive (this is where I’m nervous about bad weather and driving)—Denver to Omaha. —Omaha to Rockford (northern Illinois).
On the way back we’re doing the same route except instead of Vegas, we’re going to the south rim of the Grand Canyon.
I’m not even sure if we hit a lot of the Rocky Mountains but am a bit nervous. We’d be taking the 15 to the 70 to the 80.
