How to best fulfill goals for first* Europe trip?

Some fairly typical questions for this sub (which has already been a lot of help!). A few things about my trip: I'm 22, American, male, I only speak a little French, I've only been to Ireland, and I have about 10 weeks this summer to travel. 

When I travel, I like to relax into the place I'm visiting, ie, find coffee shops, bookstores, bars, etc. Still enjoy museums and touristy stuff sometimes, but very much a homebody wherever I go. I'm trying to find cities that accommodate this, and so far I'm considering: Bologna, Munich, Vienna, Budapest, Ghent, Antwerp, Edinburgh, and Lyon. Obviously, not trying to hit the big ones this time around (Paris, etc).

However, I also want at least one opportunity to get out of the cities and explore areas that are a little more natural, maybe on a day trip. Felt like I really missed out on Ireland because I couldn't figure out how to hike around the countryside.

So, my questions boil down to:

Are the above cities likely to be accommodating/relatively easy to navigate and still have their own flavor (not tourist traps)? Any other suggestions? What's the best way to travel/lodge if I'm potentially hitting 5 or 6 cities?  What's the best place/way to get some natural beauty in?  And is a rough budget of $4000 (not counting flying) enough for 10 weeks?
