3 weeks left on my SEA trip to split between Siem Reap and Chiang Mai areas... give me some recommendations

Alright so I have 3 weeks left on my trip and as it comes to a close I can’t help but want to make the most of each day so I’m looking for recommendations on what to do in these areas!

My plan right now is to go to Siem Reap for 3 days, and then Battambang for 2 (but can extend either). Then head to Chiang Mai and Chiang Rai... if I have time at the end maybe a take a bus for a few days in Koh Samui before flying out of BKK, was originally gonna hit Laos and the slow boat but worried about Thai immigration letting me in a third time in 2 months to fly home.

I definitely want to go to an elephant sanctuary and do some whitewater rafting, and possibly try rock climbing. Also question on those: Do I need to book in advance online? And are these something I should try to negotiate price on?
