Need help on narrowing down locations. 30 days minimum. April. Budget around $3000.
I'm looking for any advice or suggestions on where to go for a one month + backpacking/walking trip. I'm open to Europe, SEA, anywhere really. Though I hate hot weather and know Thailand is in its hot season then. Though I heard Vietnam is nice. I would like to see Spain and Italy. Maybe some Eastern European countries.
I like a place where I can do my own thing, quiet, not interested in night life or spending money on museums, I like to walk around see random things, read books, eat good food, if the people spoke a little english it would be nice (I know a bit of spanish and minimal french), and cheap of course :)
In November I did Paris, Amsterdam, Dortmund, Munich as my first backpacking trip. For about 3 weeks. I am a 22 yr. male from USA. I do wish I moved around more (as in staying in different smaller cities) as I kind of did a relaxation thing while I was there, although I walked a good 8-12 miles a day in Paris, less in the other cities...
Things I noted...

I loved Paris. Stayed in Airbnb and loved the feeling of basically living in the city, doing my laundry, cooking, etc. but in Europe. We really only were inside to sleep and eat the occasional cheap meal before going back out, and I stayed inside to watch a football match because I couldn't find anywhere it was playing nearby. Even though we were rooted to one place for the week we still walked non stop and I loved it. The people there were amazing. I would always start conversations in French but end up speaking in English cause I barely know any French and all the Parisians were happy to speak English it seemed. If you go, check out Frenchie To Go and accompanying restaurants, best food place I went on my trip, in fact I ate breakfast there 6 out of the 7 days, the one day I didn't eat breakfast there its because I had lunch, and then dinner that night.

Amsterdam was honestly a disappointment. I met up with my brother who was there and stayed in his hotel. It was out of the way which meant we needed to walk a good mile or two everyday to just get into the main areas. The walking wasn't a problem, except for the fact it felt bland, uninspiring and just underwhelming. (Walking in Paris with no goal in mind was never boring, always peaceful, not so much in Amsterdam) It really seemed like there just wasn't much to do there as travelers if we didn't want to pay for museums or smoke pot all day. That may just be a culture thing where I gel more with the relaxed nature of the South, where you can walk aimlessly and sit with an espresso for a few hours on a terrace, whereas I felt Amsterdam there was nowhere to really relax and not many food options. (Thai food there was amazing! Thaise Snackbar Bird). And the party culture there was not appealing to me. In the RLD (obviously you ask for it going there) it was basically a frat party of english bros drunk which I have no interest in.

Munich and Germany in general I would probably not go back to. Unlike Amsterdam I didn't dislike it, but it was whatever...not as exciting as Paris, not as dull as Amsterdam. People were a bit rude but hey, but some were nice, I don't speak a lick of German so I'll take it. Comparatively my most minimal french in Paris and the few places we stopped on the way to Netherlands seemed to make the locals happy I was trying.
edit: Budget wise I would like to keep it to around $3000 USD including round trip flights. I spent for my last trip about $2000 in three weeks with flights, but spent way too much in Amsterdam :) In Paris I got by on less than $20 a day plus $50 for airbnb, so $70 a day.
