3 Weeks in Peru - Itinerary help and other questions

I am planning on going to Peru for 3 weeks this summer and have some doubts regarding my itinerary, specially in the Cusco area. This is what my current itinerary looks like after some research:

Some additional information before the questions:
- I tried to include Trujillo and Huaraz in my plans but I don't have enough time. Although I have some unmarked days in the end, it takes too long to go to Trujillo/Huaraz to enjoy those places properly (like treking to Laguna69).
- My initial idea was to do Peru and Bolivia but, once again, time.
- I have no interest in visiting Puno or Lake Titicaca.
Now the questions:
- Should I leave Lima late afternoon on day 2 instead and do Paracas in one day? Is there any difference between the regular Paracas National Reserve tour and the ATV one?
- Should I leave Huacachina late afternoon on day 5 instead? I have nothing planned for the day.
- How many days should I spend in Arequipa? And I read the 2D/1N Colca Canyon trek is a bit rushed. Should I do the 3D/2N instead?
- As for Cusco, besides the Salkantay Trek that will take 5D/4N I'm a bit lost. Currently I have 2 days before the trek, one to explore Cusco and acclimatize, the other to tour the Sacred Valley. But what should I do after the trek? I would also like to visit the Salineras and Moray (the Sacred Valley tours include these?) and the Rainbow Mountains, so at least one additional day in Cusco?
- I was thinking maybe staying in Ollantaytambo after the Salkantay Trek?
- So basically I have 4 full days after I need to go back to Lima. Any recommendations for other tours, activities, places to visit or stay?
- I will miss the Inti Raymi for a couple of days. Should I extend my vacation just for this, is it worth it? Maybe too much chaos and confusion?
