Southern US solo trip next wk (TN,GA,AL,MS,LA) - looking for recommendation :)

Hello fellow road trip enthusiasts!

I'm going on a solo road trip through parts of the southern US next week (SUN-FRI) and am looking for suggestions of places to stop, things to do, where to eat, sights to see, affordable lodging, scenic driving routes, etc, etc.

It's not set in stone by any means, but THIS is what I envision will be my approximate overall driving route/loop over the 5 day trip (LINK / MAP).

The only thing set in stone is that I am flying from Toronto to Chattanooga on Sun Nov 5, and then flying back to Toronto from Chattanooga on Fri Nov 10.

Here is the very rough itinerary I had envisioned, but like I said, almost all of it is flexible....

NOV 5 -2pm arrive in Chattanooga, pick up rental car -scenic drive south through the Armuchee Ridges (northwest Georgia) -quick stop in Rome, GA -continue south through Talladega National Forest, Alabama -overnight in Montgomery, AL -where to eat? night life/bars/live music?

NOV 6 -spend the day visiting civil rights related stuff around Montgomery and Selma -continue south to Gulf Shores or Mobile,AL -should I stay overnight in Gulf Shores or Mobile??

NOV 7 -drive the Alabama/Mississippi/Louisiana coast line to New Orleans -overnight in New Orleans

NOV 8 -additional day+overnight in New Orleans

NOV 9 -long drive day 7h30m total back to Chattanooga -overnight in Chattanooga

NOV 10 -12:30pm flight back to Toronto

It's going to be a very whirlwind trip covering many miles in just a few days, but that's sort of what I want to do. I definitely want to make it to New Orleans and I figure you can't go to New Orleans and not spend at least 2 days there. But again...open to any suggestions with regards to my route plan, etc.

The purpose of this trip for me is just to take in as much authentic local culture, history, food, fun, nature/scenery, live music and people as I can. Perhaps predictably, I'm especially interested in off-the-beaten-path / not overly touristy stuff.

I really appreciate any local knowledge and recommendations anyone is willing to provide. I'm really excited to explore this part of the U.S. and take in the culture and people. I'm fairly shy but definitely hoping to meet and chat and hang out with some nice folks along the way.
