Week Off in December - where should I go?
I have some extra PTO to burn at work and ended up just taking off the first full week of December. I've considered going almost anywhere - from chilly Iceland to see the Northern Lights, a last minute booking on a ship headed to Antarctica, to a whirlwind trip through Cambodia. I'm open to visiting anywhere, so long as there is some adventure to have. I currently live in NYC, so I have easy access to major airports.
Already traveled to: Spain - France - Guatemala - Belize - Morocco - Eastern Canada - and have a trip planned to Costa Rica, so I'd like to avoid revisiting those places.
Length: 9 days - a week off with both weekends
Budget: I have money saved, but right now I'd prefer to experience multiple places over the year than check pricier destinations off my bucket list. ~$2000, but am flexible for exciting opportunities.
Climate: It's December, so I'm setting my expectations pretty low. I don't have long enough to make the warmer climates of SEA worthwhile, and with an upcoming trip to Costa Rica, don't necessarily want to hit Central America so close. I'm down with cold if the experience is worthwhile, and am not a big beacher.
Interests:

Food: Not a foodie, but appreciate a great meal and making sure I taste the culture. I'll eat right from a fisherman or at a fancy place! I don't need to be going to any particular destination just for the food.

Outdoors: I love a trip where there is a large outdoor element. I enjoy seeing all sides of a culture, not just the cities. I love when an adventure comes along - Camels in the Sahara, Spelunking in untouched caves in Belize, etc. Those are the moments I crave!

Culture: I want to see the cities for the culture, learn about the people and the way of life. If I have the time I am happy to check out famous Museums with works I've only seen in Art History books, but it's not top of my list. A lot of times I just end up walking around!

Safety: I'm always very conscious about safety, as a woman travelling alone! For that reason I have done tours to places like Morocco, or coordinated day trips from my hostel/hotel in places like Belize. I am a big fan of groups, where I can!
