Two months trip to Mexico (maybe Southwest USA), looking for recommendations

I'm a 24 yo brazilian who went on an exchange 5 years ago to Mexico City. I'm finishing my college degree this December, and right after that I'm planning on going back to my dear host country.

My host families are willing to host me again for the time I need, and do intend to stay a couple of weeks in Mexico City, occasionally visiting some pueblos mágicos near by and what not.

My budget is 2k US dollars, and I'll receive the round flight from my parents as a gift.

I already have a loose travel trip for the 5 weeks after the Mexico City stay:

I'd go to Cancun or Merida, stay a week at the Yucatan peninsula, then proceed to Chiapas and travel by the Pacific Coast, occasionally deviating a little (I'd really like to go back to Oaxaca City and Monte Albán) and eventually getting to Jalisco, where I'll stay a couple of days at Guadalajara at a friend's place.

After Guadalajara, I'm not really sure where to go, but I'd like to maybe get a taste of the North, since it was the only region that I didn't manage to visit. I really want to visit Xilitla in San Luis Potosí, and maybe Real de Catorce, and maybe do the Chepe trip.

I'd even considered abandoned the South Mexico part and go straight north and visit the Southwest of the US, going to the National Parks and going to Colorado to experience the weed/breweries experience.

I don't really have to go back in 2 months, and I could extend my trip, since I don't have a job or anything waiting for me. I would even consider working to increase my budget.

My Visa situation is updated and up to go for both countries.

From the really big distances I'd buy plane tickets, like Mexico City-Cancun, but otherwise I'd travel by bus. Is it the best option, economic and security wise? Or renting a car in Mexico is better? I don't really like driving and don't mind traveling by bus during long hours.

I was also considering volunteer working in a farm, like the WWOOF program. Do you guys have any recommendations on that?

I have this somewhat loose ideas that I have to program and stitch together, but I'm open to recommendations of any kind.
