End of Dec ~15 days, Siem Reap, Chiang Mai + ???

I'm planning a solo trip (female) to SE Asia for the last couple weeks of December. US citizen, flying to/from Shanghai (so less travel time)

I'm thinking 3.5 days in Siem Reap (direct flight), 4.5 days in Chiang Mai, and then what should I do for my remaining 7 days?

I want to avoid Bangkok, as I've spent a week there before. Thinking about spending some time on Thai beaches to relax/snorkel, but only for 3-4 days max. Can I fit a quick trip to another city in another country? Or switch out the Thai beaches? Laos/Vietnam/Bali/Philippines? What are your suggestions? Or a week of Thai beaches/islands (which ones?)

Fun fact: the last week of Dec includes Xmas and my birthday, so I want it to be memorable!
