Looking for a sanity-check and some advice before booking our honeymoon flight to Italy

My fiancee and I will be honeymooning in Italy late February to early March next year. We are from Florida. We want to save money, but also want a stress-free experience and we could use a sanity-check and some advice. The honeymoon will be about 2 weeks and we would like to spend the first few nights in a nicer hotel before setting off to explore the country. We've been to Europe once before.

We've researched prices through airlines, 3rd parties, and 3rd-party bundles (Expedia). I'll summarize our findings below and then ask about our concerns.

Airline vs. 3rd Party vs. Bundle

Booking Through an Airline

  • Tickets are usually at least $1,200 per person :(
  • Least stressful travel if we need customer service.

Booking through Kayak or Kiwi.com

  • Tickets are under $800 per person. (Some baggage fees may apply)
  • We've heard that customer service can be a nightmare if a flight is canceled or delayed and a connection is missed. Thus, we are nervous about booking through a 3rd party.

Booking a Bundle through Expedia

  • Tickets and 4-or-5-star hotel for the first 3 nights for under $1,000 per person.
  • Honestly, I'm excited about these deals because normally I wouldn't think we could afford hotels that are usually $300+ per night.
  • After the first 3 nights, we would use AirBnB or other cheaper hotels to explore Italy.
  • Again, we're nervous due to 3rd party booking.

Our Questions

  • How nervous should we be about 3rd party booking, given that it's our honeymoon and, you know, we want it to be wonderful? Specifically, should we be pretty safe with an Expedia bundle with a hotel?
  • Do you recommend traveler's insurance to offset any risk of bad luck with flights? (What would we need that isn't covered by our MasterCard?)

We also welcome any comments in general about whether these are good deals or whether we should be considering anything else before we book our flights. Thank you for reading and helping!

TL;DR - Booking through a 3rd party seems like the best option for our budget (especially with hotel bundles), but we want to be confident that this won't cause stress.
