I would like to do exactly as the title says in December. I'm looking for suggestions please.

-Departing Manchester, UK
-4/5 week trip
-Lively Nightlife is good
-Tasty local food is a must
-Intensive Spanish language course (I barely have the basics)
-Solo trip - Hostels rather than hotels so I can meet others

Medellin, Colombia seems to satisfy everything other than diving. Is there somewhere that has it all?
